Rajasthan—the
destination known for its royalty is famous for its food. The lack of
vegetables and water influences Rajasthani cuisine, which is significantly
developed with times. The state offers a wide range of unique lip-smacking
dishes. Different regions of Rajasthan have their trademark dishes. Following

Dal Bati and Churma
The state's
signature dish-dal bati and churma is a tasty dish. Bati is a hard
sphere-shaped bread with a long shelf life. It requires very less water for its
preparation and is eaten with dal. The dal is made of lentils. Churma is
nothing but a crushed bati mixed with ghee and jaggery or sugar.
Papad ki sabzi
Again the result
of the shortage of rain and water, made natives think out of the box, and the
result was papad ki sabzi. In this curry, roasted papads are broken roughly and
added to the dahi. The gravy is made with gram flour, chopped coriander leaves,
chili powder, and turmeric. The mouthwatering curry is served with roti, and is
often liked by many.
Bajra ki roti with lasun chutney
Bajra is black
millet flour enjoyed all over India. The Bajra roti made in villages is cooked
over cow dung cakes, which imparts it a smoked flavour. The rotis can be eaten
with any vegetable on Rajasthani menu. Nevertheless, Bajra roti is also
accompanied with lasun ki chutney made from garlic, jaggery, homemade butter,
and red chilli powder.
Gatte ki sabzi
For making Gatte
ki sabzi, you do not need any fresh vegetables, and that is its specialty. The
curry is made with gram flour dumplings, and gravy made up of buttermilk and
spices. It is best enjoyed with rotis.
Ker Sangria
Ker is a popular
Rajasthani dish that is a tangy and peppery wild berry. Sangria is a long bean
grown in the desert areas of Barmer and Jaisalmer. Sangria was the main
vegetable during drought as it has 53% protein. It is believed that the
villagers of Rajasthan found these vegetables during a famine and due to the
scarcity of water, cooked them in vegetable oil with spices. From that day
until now, the vegetable is eaten with Bajra rotis. Though, the Ker Sangria of
today is cooked with buttermilk or water.
Ghevar
Ghevar is a
special sweet dessert from Jaipur. It is a disc made from flour that is soaked
in ghee, milk, and is topped with sliced almonds. The sweet dish has a crunchy
texture.
